Fruit Salad with Simple Honey/Mint Syrup


  • 1 cup honey
  • 1 cup water
  • fresh mint leaves (about 1/2 cup)
Combine all ingredients over med-high heat and bring to a boil, stirring occasionally. After honey is dissolved, remove from heat and let stand 20 minutes or longer. You may discard mint leaves or leave them in. Cover and chill for a few hours (will last up to 2 weeks in the fridge). Drizzle over fresh fruit of your choice (peaches work nicely but just about any fruit will do).

Note: This mixture can also be used to sweeten iced or hot tea and to spruce up your yogurt or ice cream! Enjoy!
